Scrape It
The easiest way to remove grease from a grill is to scrap it off. There are tools designed for this specific purpose. Scrape the grease from the grill and into the collection tray. You may need to scrub the old grease that has been stuck on the grill for a while.
Rinse It
Don’t be afraid to put some water on the grill to remove the grease. The water can help bring the grease to the surface and make it easy to wipe and scrape off. Try spraying some water on the grill while it is still warm for the best results.
Check The Drop Tray
Don’t forget to clean out the drip pan and the grease collection tray. These things can easily become full and it can be dangerous to leave too much grease in them. Empty them into the trash and rinse the pan before replacing them.

Personality
It takes a special kind of person to work in a restaurant. Not everyone is capable of taking orders, being a friendly greeter or busing tables with a smile. You want your restaurant to succeed and be welcoming to guests so it is important to choose a staff that has a great personality.
Background
You don’t want to hire someone with a bad or violent background to work in your restaurant, around you and your family or around the public. Always do a background check to make sure the people you are considering hiring are safe to work in your restaurant.
Work Ethic
If you hire someone with no work ethic, your restaurant will suffer. Hiring someone who wants to help your restaurant become successful will make all the difference. You will be able to tell fairly quickly if someone has a strong work ethic so don’t be afraid to hire someone as a temporary employee until you can tell if they have what it takes to stay.
